ビターズ
ビターズ (bitters) は、薬草・香草・樹皮・香辛料など数種類を酒に付け込んで作成する、苦味の強いアルコール飲料。苦味酒・苦味剤ともよばれる。昔は胃薬などとして使われていたが、現在では主にカクテルに苦味をつけたり、香りや色を良くしたりする目的で使用される。イギリスの有名なエール (ビール)|エールの1種、「ビター」とはまったく別のものである。ビターズの製法はブランドによって様々であり、またその詳しい製法は秘伝とされている場合が多い。したがって、詳しい原材料については不明であり、資料によっては記述が異なることもある。ビターズは通常ごく少量のみ使われるため、「ビターズ・ボトル」(bitters bottle)という専用容器に入れておくことが多い。ビターズ・ボトルはひと振りすると中身が1ダッシュ（数滴程度）ずつ出るようになっている。
